The traditional ceviche ($16) blends dashi — a Japanese broth — with the citrus-based marinade leche de tigre, creating a fresh flavor to cleanse your palate. A generous serving of crunchy choclo — Peruvian corn — is served alongside, giving the dish a slight smoky taste.
