Thanksgivukkah eve is upon us and whether or not you're celebrating this holiday mashup where Maccabees meet turkeys, we can all agree on one thing:

Potato latkes are delicious.

Look, it may be Thanksgiving, but it's still Hanukkah, and that means a valid excuse to eat golden fried potato pancakes for eight crazy nights. Plus, what goes great with turkey? Potatoes!

We consulted Miami's latke expert, Danny Serfer, who makes them year 'round at his Blue Collar restaurant, for the best possible way to utilize the latke for all your food needs this holiday season.

Serfer came through with three ways to incorporate potato pancakes into Thanksgivukkah celebrations. Hint: You don't have to celebrate the holiday to enjoy these golden brown delights.

First, he shared his basic (and delicious) latke recipe, which is the perfect substitute to mashed potatoes (heck, serve both).

Then, Serfer got all schmancy, turning the pancakes into appetizers like mini-Corbens, pizza latkes, and caviar-topped treats.

Finally, how do you make a leftover turkey sandwich amazing? Add potato latkes!

Basic Latke

3 Idaho potatoes shredded

1/4 cup grated parmesan cheese

salt and pepper to taste

1/4 cup chopped chives

Note: No need for an egg. The parmesan acts as a binder.

Mix everything well.

In a non stick pan, heat up 1/2 cup olive oil to 325 degrees.

Form the mix into discs about 1.5 inches in diameter.

Fry 3 minutes each side or until golden brown and crispy.

Thanksgivukkah Hors D'Oeuvres

All start with basic latkes (see recipe above)

Thanksgiving Corben Nibbles

Take the cooked latke, put a dot of dijon mustard on top, add a slice of brisket, top with apple sauce and sour cream.

Pizza Latkes

Top latke with tomato sauce and mozzarella cheese. Bake in oven until cheese is bubbly.

Fancy Latkes

Top latke with sour cream and a button of caviar.

Thanksgivukkah Latke/Turkey Next Day Sandwich

Fry the latkes (see above recipe), but make the discs three inches in diameter. Remove and let cool.

For leftover turkey sandwich pile turkey, cranberry, stuffing and mayo in between two latkes. Enjoy your "next day" sandwich.
