It's no secret that Coconut Grove is undergoing a renaissance, and part of it has to do with a few key people who've shaped the neighborhood. Among them is Lokal owner Matt Kuscher, who opened the burger-and-beer joint just before Christmas 2011. And now, after planting roots in Wynwood with Kush, Kuscher is coming back to the area that started it all as he gears up to open the Spillover at the Mayfair, directly across from the old Miami Improv space.
"We are shooting for the end of summer," Kuscher says of his third and totally different concept, which will forgo his trademark buns and suds and instead focus on local seafood, wine, ciders, and mead. True to form, everything will be made from scratch as it is at Lokal and Kush. "It's basically our seafood version of Lokal."
The only difference will be the design aesthetic. "I am collaborating with local artists Andrea Mejia and Camilo Rojas to make it a cleaner, next-level version of Lokal and Kush." That probably means the whole interior won't be made of recycled materials and trash, or at least in a way we've yet to see. If there's one thing Kuscher is sticking to, it's his philosophy of being eco-friendly and earth-conscious.
Beer snobs who turn to Kush for the latest and greatest reserves and exclusives, you'll still be able to get great craft brews here, but Kuscher wants to tackle a new beast. "Our goal is to help introduce and educate Miami on ciders and meads that we feel go amazing with our menu. We will obviously have great beers selected by our beer director, David Rodriguez, but we also plan on carrying hard-to-get ciders and meads and showcasing the difference between ciders from the U.S. and from Spain, England, and the rest of Europe."

Kuscher says he's been working on this concept for two years, even before opening his childhood dream, Kush. "I never felt there was a place in Miami where you could get good local seafood in a affordable, casual environment. There are great oyster bars and awesome places for stone crabs, but where do you go to get a great grouper sandwich or lobster BLT? We sell a ton of fish sandwiches at Lokal, and I knew there was a need to expand on that in a different format."
As for prices, items will range from $10 to $30. There will be lots of outdoor seating on the promenade and, of course, space to dine with your dog.
"The Grove is my home and where the neighborhood has been so good to us. I know they embrace and support local family-run businesses that are done right."
