No longer any need to rush out to Sun Life Stadium for the delicious food behind the concession stands. Centerplate executive chef Orlando Morales, with whom we just completed a two-part interview with (a-one-and-a-two), has been kind enough to share a recipe for the official Sun Life Stadium cheese arepas. So now you can watch the Marlins on television while enjoying authentic ballpark cuisine. Corn batter up!
Centerplate Chef Orlando Morales
3/4 cup whole milk
2 tsp. butter
1 cup corn kernels (fresh or canned)
1 cup arepa flour or fine corn meal
1/3 cup brown sugar
1/4 tsp. salt
8 slices mozzarella cheese
Melt butter and add to milk.
Chop the corn kernels in a food processor.

SHOW ME HOW
the ground corn, arepa flour, salt and brown sugar. Make a well in the
center and gradually add the milk-and-butter mixture. Stir until there
are no lumps.
Work the dough until it is smooth and sticky.
Divide the dough into four equal pieces and form it into four round flat patties.
Stuff each patty with cheese.
Add butter to saute pan and fry until cheese melts and the arepa is golden brown.
Presentation: Butter the arepa, add a slice of cheese on top, and serve with grilled chorizo and hot chocolate.
