Okay, so the name doesn't sound that appetizing. It conjures up images of rubbery vegan "cheese" alternatives that refuse to melt. And trust me, I was a vegetarian for years, and the only thing that kept me from going vegan was how much I love real, salty, gooey cheese. But the herby and garlicky pumpkin seed and nut "cheese" topping on this happy mess of tomatoes, zucchini, bell pepper, onions, and spinach is creamy, spreadable, and full of earthy, fresh flavor. And unlike many raw "breads" that are made out of dehydrated nuts and take on the consistency of thick crackers, the crust of this vegetable pizza ($14) is spongy and chewy as though it were made with real dough. In actuality, it's a mix of sprouted quinoa, flaxseeds, and sun-dried tomatoes with a light smear of tomato-herb "pizza sauce." The result? A pizza good enough to convince even a die-hard cheese-lover to consume more vitamins and minerals (most of them are lost when food is cooked) without feeling like it's a massive sacrifice.
