Canyon Ranch's Avocado-Mango Tartare Recipe

​Chef Giovanni Arias promised us a delicious, healthful recipe, and he delivered. Wait -- you don't know who the guy is? Read the first part of his interview here and the second part here.

You can get to know him even better if you take one of his cooking classes, one of which is scheduled to take place at Canyon Ranch April 28. Others will follow once or twice a month.

And because we're doing things all Canyon Ranch-style here, you should know the nutritional value of this app per serving: 96 calories, 15 grams carbs, 2 grams protein, 5 grams fat, 0 cholesterol, 387 milligrams sodium, 4 grams fiber, and 21 milligrams calcium.

Avocado-Mango Tartare
Serves 1

1 ¼ oz. avocado, diced
1 oz. heirloom tomato, minced
1 oz. yellow peppers, diced
1 oz. mango, diced
1 tsp Key lime juice
1/8 tsp Maldon salt
½ tsp ground black pepper
½ oz. red onion, diced
pinch chopped cilantro

Directions: Combine all ingredients, except avocado. Place a ring or mold on a plate and scoop avocado in first; then top with another scoop of mango-vegetable mixture.
