Pinch is the first Miami restaurant to spin off of the burgeoning Pubbelly empire. Its owners — Rene Reyes and John Gallo — first met and dreamed of opening a place together while working at Casa Tua. They later spent years together in various Pubbelly operations before opening their cozy spot just north of the MiMo District in autumn 2015. But don't expect a Pubbelly knockoff. Instead, you'll find familiar, comforting flavors punched up with the unexpected. There's dark chocolate in the beet salad and in the oxtail braise that lands atop a heap of risotto. A juicy cut of pork called secreto is accompanied by an ethereal potato foam cuddled in a cup of gossamer potato chips. The menu is short and constantly changing — plenty of reason to plan a visit soon.
