The year 2017 marks the tenth anniversary of the James Beard Award-winning Michael Schwartz's Design District flagship. One might think claiming a Beard is the zenith of a chef's career. But for Schwartz, now 52 and with a graying goatee, the pressure intensified to the point where life at home nearly collapsed. Yet he pushed through, relying on a close team to help get him out of the kitchen, and focused on how to expand his locavore ethos in Miami and beyond. Soon he'll open a trio of yawning restaurants in three of Miami's most anticipated high-rises. He hopes to expand his pizzeria named for his teenaged son, all while overseeing a fleet of restaurants aboard six Royal Caribbean cruise ships. Yet all of that growth hasn't changed his culinary ethos. He's still obsessed with finding the best proteins and produce possible (even if some come from outside of Florida) and letting them roast on the wood grill. Afterward, there's a good hit of a piquant, vibrantly seasoned sauce designed to let the ingredients sing their best song.
