Since debuting in Wynwood in late 2023, followed by outposts on Calle Ocho, inside the Kaseya Center in downtown Miami, and up north in New York City, Skinny Louie has built a steady following with its stripped-down menu, late-night hours, and flat-top smashed patties.
The shop already has nearly 60,000 followers on Instagram, and word on the street is that Skinny Louie is headed for South Miami, Aventura, and West Palm Beach next.
A Smashed Burger Icon Overnight
Founded by Argentinian-born Gonzalo Rubino, the brand made its name on a small but mighty menu of burgers, fries, and shakes. Options include the Skinny Louie cheeseburger layered with American cheese, lettuce, tomato, onion, ketchup, and mustard, an applewood bacon version, and the "Wagyu Louie," a double-patty upgrade with smoked gouda, truffle aioli, and pickled jalapeños.The latter won "Very Best Burger" at the 2025 South Beach Wine & Food Festival's Burger Bash, beating out a dozen competitors. The brand has also been recognized on New Times' 7 Best Smash Burgers in Miami list and won New Times' Best Late-Night Dining in 2024.
While the brand has expanded quickly, the format remains consistent: counter service, no reservations, and everything cooked to order on a sizzling flat-top. Burgers are served in paper-lined trays, shakes are spun old-school, and the only customization involves how many patties you can handle.
The Giralda Avenue location is the first in a wave of planned openings for the brand, which has hinted at further expansion across South Florida, including Aventura, South Miami, West Palm Beach, and Dania Beach.
