Cheesecake made of Manchego? We can barely swallow those goat cheese varieties that seemed so hip last year. But when we got treated to this delicate slice of Antonio Bachour's torta de queso de Manchego ($10) at Solea, we were transformed into believers. It's ever-so-slightly savory and merely highlighted with Manchego flavor and a pinch of sweetness, but it's the texture, more than the taste, that really had us swooning. Then Bachour (a.k.a. The Pastry God) paired it with mango compote sprinkled with edible flowers, baked coconut meringue cigars with toasted coconut, a swab of mango puree, and--ignoring our pleadings to stop the insanity--mango sorbet stabbed with a square of mango candy. What a masochist! But it hurt so good.
