Steven Rodriguez and Lismeilyn “Liz” Machadom — both Cuban, both vegan -- decided to make plant-based versions of the foods they grew up with. Vegan Cuban Cuisine, which opened in mid-2020, serves “veganized” versions of classic dishes like picadillo, fritas, croquetas, and Cubanos from its ventanita. If you harbor the slightest doubt as to whether the food is delicious and authentic, you don’t have to take our word for it: The owners sought and received a stamp of approval from their Cuban families prior to opening.
