Beaker & Gray is perhaps Miami's most ambitious casual restaurant. A hip crowd floods in for fries loaded with huancaína, pickled bacon, and queso fresco, as well as libations spiked with house-made bitters and syrups. Seemingly simple plates are dotted with fluid gels, but the simplest preparations work best. The shrimp and polenta seems unassuming, but the sweet, fluttering acidity of the blue corn and pineapple is a refreshing contrast to the meatiness of the bacon.
