At the top of the list in that second category is Daniel Boulud, whose celebrity has never gotten in the way of his technically profound and gastronomically delightful, well. . . chefness. And come this fall, His Chefness will be setting up shop in Miami so the hungry and well-heeled will no longer have to journey to the wilds of New York or the milds of Palm Beach for foie gras torchon with house-made brioche or the world’s most decadent burger.
The third db
Bistro Moderne its parents are in New York and Vancouver) will
debut in the new J.W. Marriott Marquis, which with its 300-plus posh
rooms and suites, views of the city and bay, and 10,000-square-foot,
NBA-approved basketball court, is definitely not your granddaddy’s
Marriott.
The Miami db is designed by the New York and Toronto-based Yabu
Pushelberg and will feature 18-foot ceilings, a terrace overlooking the
Miami River, sleek bar and lounge, nifty “wine tower” adjacent to the
entrance and a trio of dining areas, each with its own distinct look.
Executive chef is Jarrod Verbiak, who’s cooked his way through the
Boulud empire, beginning as a cook at Restaurant Daniel in the Large
Pippin and moving on to positions in Las Vegas, Palm Beach and Beijing,
where he probably never, ever uttered the word, “Bam!”
