The Fish Shack & Market may be a newcomer, but it can already teach

more than a few veterans how to make a perfect fish taco.

It’s a simple enough formula: Pristine fish from local waters cut into hefty chunks, blackened on hot griddle, plunked into three soft corn tortillas along with tomatoes, red onion, cilantro, minced jalapeño, and shredded white cabbage. A squeeze of lime juice is de rigeur, a drizzle of red or tomatillo salsa optional — as is an ice cold beer.
