The Bazaar's original SLS incarnation earned quick praise after opening in 2012, where it remained a hotspot for a decade. It became a go-to spot for inventive plates like liquid nitrogen caipirinha cocktails and modernist takes on traditional Spanish tapas. Think foie gras wrapped in cotton candy and "Dragon's Breath" popcorn that made diners exhale dramatic clouds of liquid nitrogen vapor.The new iteration promises the same theatrical dining experience that made the original a South Beach sensation. While the opening date hasn't been announced, the restaurant plans to bring back some fan favorites alongside new creations designed for the Andaz location.

Two Mediterranean-Inspired Spots Joining the Bazaar at Andaz Miami Beach
Aguasal, a coastal Mediterranean concept that draws its name from agua salada, (Spanish for saltwater), will join the Bazaar at Andaz. The restaurant mixes Mediterranean cooking with Florida ingredients, serving plates inspired by spots from Miami to Mallorca to Mykonos.Bar Centro will round out the trio, morphing from a Spanish café to a cocktail spot as the day progresses. The drink menu stars signatures like the "Daisy de Grana" topped with Andrés' salt air foam, and in the morning, customers can expect fresh juices and Spanish pastries, including xuxos (what Andrés calls "the croissant of the gods") and pressed sandwiches. Evening options feature José's mother's croquetas and a decadent four-cheese grilled cheese.
The Bazaar maintains successful outposts in Las Vegas, Chicago, New York City, and Washington, D.C. Its Miami homecoming at Andaz adds to José Andrés' growing South Florida footprint — he already runs Zaytinya at the Ritz-Carlton South Beach, where his group oversees all food and beverage operations including the Lapidus lobby bar and DiLido Beach Bar.
