Midorie is evolving — but its soul, rooted in Japanese tradition and mindful hospitality, remains untouched. Owner Álvaro Perez Miranda shares that the transformation of Wabi Sabi into Midorie is all about “consistency and growth,” with the brand expanding beyond Miami. “Wabi Sabi has always shared a concept and menu identical to Midorie,” Álvaro says. “As APM expands Midorie outside Miami, including a new West Palm Beach location, streamlining the name while keeping the essence that loyal local fans have come to love makes the most sense.”
