Pineapple is the new flavor du jour from SKYY Vodka, the American spirit company whose Infusions portfolio already includes Citrus, Cherry, Grape, Raspberry, and Passion Fruit. SKYY Infusions Pineapple Vodka is tabbed as “a lively, juicy tropical explosion of luscious” — wait a second, is this describing vodka or a day at the beach for Father Cutié? — “pineapple fruit notes with hints of complex Valencia orange and citrus peel, creating a fantastic finish layered with exotic sweetness.”
The 70 proof spirit retails for $18.49 (750 ml) and $26.49 (1 liter). It tastes just fine on the rocks, and lends itself to cocktails that might ordinarily call for rum. The recipe below, plus those after the jump, are ideal for this time of year, when the sweltering heat is poised to pound us. If you don’t feel like concocting a SKYY Pineapple cocktail yourself, head to Michael’s Genuine in the Design District — it’s the only place in town we know of that is serving these drinks.
PINEAPPLE SUNRISE
1 oz. SKYY Infusions Pineapple
1 oz. SKYY Infusions Citrus
1 oz. Triple Sec
1 oz. Pineapple Juice
Splash of Honey
Splash of Grenadine
Shake all ingredients with ice and pour into a collins glass. Garnish with pineapple and orange. Accessorize with a parasol.

PINEAPPLE SKYY THAI
2 oz. SKYY Infusions Pineapple
1/2 oz. Orange Curaçao
1/2 oz. Fresh Lime Juice
1/2 oz. Amaretto or Orgeat (Almond Syrup)
Combine all ingredients. Add ice. Shake and strain into a glass filled with fresh ice. Garnish with lime, orange or an umbrella.
SKYY PINEAPPLE DAQUIRI
2 oz. SKYY Infusions Pineapple
1 oz. Simple Syrup
1 oz. Fresh Lime Juice
Build cocktail over ice. Shake and strain into a chilled cocktail glass. Garnish with a lime wheel.
