The beloved Coral Way hideaway, known for its intimate lighting, live music, and its delicious "Chug Burger," croquetas, and charcuterie, is taking a brief summer intermission for quick renovations. But before you spiral thinking your go-to date night spot is out of commission, don't worry — the Gibson Room is making the most of the break.
"At the moment, the Gibson Room has paused dinner service for quick renovations," Ariete Hospitality Group's marketing director, Bruschenka Hernandez, tells New Times. "In the meantime, we're hosting our 'Summer Sessions,' an intimate one-night menu curated by chef Michael Beltran, with the first one kicking off this Friday, July 11. Guests can book their experience via OpenTable for the sit-down dinner (priced at $75 per person), and over at the bar, we'll be serving fried chicken and our fan-favorite 'Chug Burger.' Thanks for your support, and we can’t wait to welcome you and your readers back!"
Summer Sessions at the Gibson
Starting Friday, July 11, the restaurant will launch its "Summer Sessions at The Gibson Room" series, a set of one-night-only dinners curated by chef Beltran himself. These limited-seating events are priced at $75 per person and can be booked via OpenTable.com. (FYI, at the time of publishing, only one spot remains for the July 11 dinner, but expect more to come.) Each dinner promises a unique menu and an intimate vibe that still delivers the signature Gibson Room magic.And if you're more in the mood for a bar bite and a cocktail, the bar will remain open on these nights, and fan favorites like the "Chug Burger" and crispy fried chicken will still be available to order (hallelujah).
An Instant Miami Staple
Founded in 2022 by Miami chef Michael Beltran, best known for his work at Michelin-starred Ariete, Chug's Diner, Eva, Taurus, and others, the Gibson Room is a dark, sophisticated bar that offers upgraded versions of classic cocktails like its namesake (a martini garnished with a pickled onion in lieu of an olive) while live jazz plays in the background.As if it couldn't get better, Beltran's food menu takes the bar up several notches with offerings like a maduros fondue, baked oysters, and fish and chips, not to mention a robust late-night eats menu. Therefore, it's no surprise that Michelin added the venue to its Florida Guide (and that New Times named it a great spot for date night).
When Will Nightly Dinner Service Return?
While there's no word yet on when full dinner service will resume, one thing’s for sure: the Gibson Room isn't going anywhere. And when it does reopen, New Times will be the first to let you know when to come back for late-night bites, spontaneous dates, and first-time flings.See you soon at the bar.
