Chef Danny Grant returns to Miami with Maple & Ash, which is set to open at Miami Worldcenter in early 2025.
The modern steakhouse will open inside the $4 billion downtown Miami mixed-use development. It will also mark Grant’s return to South Florida after working at several local restaurants nearly a decade ago.
According to the restaurant group, Maple Hospitality Group, the restaurant is the highest-grossing independent restaurant in Chicago and the top-earning steakhouse nationwide.

Standout dishes range from dry-aged steaks seared over burning logs to a coal-roasted seafood tower loaded with lobster and scallops.

From Finding Success in the Windy City to Downtown Miami
In 2015, Maple & Ash opened along Chicago’s Gold Coast and quickly became the city’s highest-grossing independent restaurant. It has earned multiple honors, including Wine Spectator‘s “Best of Excellence Award” and a 2023 Tales of the Cocktail nomination for “Best Restaurant Bar.” In 2019, the restaurant added a Scottsdale, Arizona, location.
Before Maple Hospitality Group, Grant had already established a reputation. He oversaw the kitchen at Chicago’s Ria, which earned two Michelin stars in 2012 and received Food & Wine‘s Best New Chef title that same year.
In an interview earlier this year on The Dining Table podcast, co-owner Jim Lasky detailed plans for the massive Miami location. The location will house three spaces: Eight Bar on the ground floor, the Maple & Ash steakhouse on the second floor, and a lounge and event space on top.

Diners can also opt for the popular “I Don’t Give a F*@k” chef’s tasting menu, which hands control to the kitchen for a multi-course meal of steaks, seafood, and seasonal plates.

While Miami’s menu details haven’t been released, the Chicago location has built its reputation on its scene-y atmosphere and wood-fired cooking.
