Blade Sushi to share space with Vida restaurant.​When Blade Sushi closed at the Fontainebleau about a year ago, the starving model types who frequent LIV must have had heart attacks trying to find low-carb alternatives at Scarpetta.

Well, Blade is back (mostly), sharing space with the resort’s Vida restaurant to meld into Vida & Blade Sushi.

Sushi chefs Benny Bandi, Aki, and Diego Ng, who have trained with the likes of Nobu Matsuhisa and Masaharu Morimoto, and have worked at Nobu, Sushi Samba Dromo, and Morimoto in South Florida, will prepare classic favorites and new creations.

Chefs Bandi, Aki, and Ng have created special signature rolls, including the Blade roll — which is composed of salmon, fresh mozzarella, spicy mayonnaise, and fried garlic — and the Vida, which has hamachi, asparagus, ooba leaf, wasabi, and Serrano chilies.
