62. Seared Scallops at Bistro One LR at Ritz-Carlton South Beach
At first glance, this dish may seem simple, but the scallops are cooked so perfectly and the flavors work so well together, that you realize it takes a really good kitchen to put out a plate of simple food that tastes wonderful.
Two plump sea scallops are perfectly caramelized on top, sweet and tender on the inside. Tasting faintly of anise and butter, these scallops shout out freshness. These beautiful sea dwellers are served over creamed corn that's reminiscent of a corn custard. A dollop of tangy tomato vinaigrette give this small plate the tang it needs ($16).
