The small Mexican eatery, located next door to Panther Coffee, has tapped Scott Linquist as its executive chef.

The chef, a Los Angeles native, has over two decades of experience with some big names on his resume, including his role as national executive chef of Dos Caminos Mexican Kitchen and as executive chef at Border Grill, co-owned by Mary Sue Milliken and Susan Feniger. Linquist also wrote the book on modern Mexican cuisine… literally! The chef penned a book, Mod Mex: Cooking Vibrant Flavors at Home.

Coyo partner, Alan Drummond, says that Linquist is a “vital component” in the success of the restaurant. “We are thrilled to partner with Chef Scott. His comprehensive knowledge of Mexican cuisine and its complexity, makes him the ideal partner to ensure our vision of Coyo is executed perfectly.”

Linquist will helm the kitchen at Coyo Taco, taking a farm-to-table approach to Mexican cuisine. The restaurant will feature local produce, naturally raised and humanely treated meats and seafood, guacamole smashed to order, and hand-made tortillas.

Coyo Taco’s goal is to be open in time for Art Basel, pending finishing touches and sign-off by the city. Stay tuned for a definite opening date, which will be announced next week.
