Downtown West Palm Beach is about to get a lot more country. For years, its popular Clematis Street has been the go-to area for bars and late-night outings. Now, West Palm Cowboy Club, a sprawling two-story restaurant and music venue, has announced it will officially open at 200 Clematis St. on Thursday, March 26, timed perfectly for the influx of the International Palm Beach Boat Show.
One of South Florida’s most anticipated spring openings, the project is from Brian Swanson and Experience Hospitality Group. The duo aims to blend the honky-tonk vibes of Nashville with a South Florida backdrop. “We’re bringing the lively Nashville energy to an area of Downtown West Palm Beach that needed something like this,” Swanson says. “A place where guests can kick back with a beer, BBQ, and enjoy live music.”

Diplo Takes the Reins
Perhaps the most buzzworthy element of the opening is the involvement of Grammy Award-winning producer and South Florida native Thomas Wesley, aka Diplo. Serving as the venue’s Musical Director, Wesley plans to shape the club’s sound, leaning into his own “Florida Cowboy” roots.
“I grew up and cut my teeth in South Florida, and it inspired so much of who I am,” Wesley says. “I’m really proud to bring this energy home and show some love to the SoFlo Cowboy. West Palm Cowboy Club is where beer, barbecue, and basslines collide, South Florida style.”

Barbecue with a Latin Twist
The food isn’t an afterthought, either. Culinary director Chef Adrian Ricouz, the man behind Miami’s cult-favorite Slab Daddy BBQ and the former executive chef of Hometown BBQ, is helming a menu that merges traditional American smokehouse techniques with bold Latin flavors.
While the menu features heavy hitters like 18-hour smoked brisket and pulled pork, Ricouz adds high-low dishes like “Caviar & Cornbread” and a “Cowboy Club Smash Burger” made with a wagyu beef blend, smoked bacon, and crispy onions. Rounding out the food lineup is a nod to the local coast with fresh Florida seafood and coconut shrimp.
The design of the 200 Clematis St. space leans into the theme with python and gator textures, custom booths, and ceilings lined with cowboy hats, naturally. Behind the bar, the program is split: bourbon and whiskey for the traditionalists, and tequila for the Florida crowd. Cocktails include the “Sunset Stampede,” a smoky blend of reposado tequila and mezcal, and the “Frozen Longhorn Lemonade.”

Launch Party & The 23+ Rule
The club opens for dinner and live music on Thursday, March 26 at 5 p.m., with an opening weekend lineup featuring performances by Brody Jenner (performing as BROSA) and Devin Lucien. Following the launch, the venue will settle into a weekly rhythm that includes “Whiskey Wednesdays” and a lively weekend brunch debuting Easter weekend with $25 bottomless mimosas.
And word to the wise, if you’re planning a late-night visit, keep your ID handy and make sure you’re of proper age: After 10 p.m., only guests 23+ will be allowed in.
