True Loaf opened in Sunset Harbour in early November, but owner Tomas Strulovic has been developing this bakery for the past three years.
“It’s been a long journey,” he says.
The Venezuela native lived in Miami before moving to San Francisco, where he studied bread-making at the San Francisco Baking Institute. From California, Strulovic saw a gap in the Magic City’s dining scene.

“Once I went to San Francisco, I realized Miami needed good bread,” he explains.
Now he’s in Miami Beach every day — shaping sourdough loaves entirely by hand.
True Loaf bakery specializes in sourdough. Strulovic uses organic flour to bake brioche, croissants ($3.50), loaves, and scones.
But they don’t come cheap. His country loaf sells for 9 bucks, and his olive loaf — packed with organic olives — costs a whopping $12.
His business already extends beyond the storefront, though. Strulovic is supplying his croissants to Panther Coffee in both Sunset Harbour and Wynwood.
Visit True Loaf bakery at 1894 Bay Rd. in Miami Beach. It’s open daily from 7 a.m. to 7 p.m.
