After the food orgy that was the South Beach Wine & Food Festival, you would think Mercadito‘s Patricio Sandoval and MGFD‘s Michael Schwartz would be passed out on a beach somewhere. But last night, both were on hand at Mercadito Midtown to launch the March rendition of Tacos for Strength.

Tacos for Strength is a national campaign that supports Share Our Strength’s fight to end hunger by 2015. Five percent of sales of the featured taco go toward the campaign, which was developed by Sandoval. Together with a different chef each month, Sandoval creates a taco to entice diners to open their wallets and help feed hungry kids.

Last night, Schwartz revealed his version: beef tongue, whipped hominy, Manchego, salsa negra, scallions, cilantro, and just enough pickled cabbage to give it a tangy bite. Asked why he chose tongue, Schwartz replied, “I wanted to do something different than the other chefs, and when cooked right, tongue is delicious.” No arguing there. At $16 for three, this tongue will keep your mouth watering all night long.
