54. Grouper Ceviche at Blue Door Fish
Ceviches too often taste like raw fish in lime juice-cilantro soup. Not so this pristine version at Blue Door Fish. The citrus and herb (along with jalapeño, micro sprouts, and teeny croutons) are delicately balanced in with sturdy, bite-size pieces of fish. The quenelle of smoked salmon mousse melts into the base and lifts it to distinctive status. The portion is $15, and is large enough to feed two as a starter. You’ll find wetter versions around town, and wackier renditions too — but this one really stands out for purity and clean flavor.
