Rather than filling his éclairs with exotic violet cream, he’ll concede to popular demand and use white chocolate instead. Aspiring cooks with a sweet tooth can learn the culinary secrets of this pastry master at today’s free cooking demonstration. Lassaque will create warm chocolate cake with sweet guacamole made with the perfect balance of avocado and banana. The charming Frenchman is fully prepared for the response of conservative confectionary lovers. “They’re gonna be like, whoa! Is this guy okay? He is French, so maybe that’s why,” Lassaque laughs. “The dessert sounds kind of weird, but I guarantee you will like it.”
