Posh new restaurant Rò Steakhouse has opened inside the Alhambra Tower in Coral Gables, marking the U.S. debut of ViCa Hospitality Group, the team behind restaurants in Mérida, Mexico, including Cienfuegos and 130° Steakhouse. Partners Carlos Aguirre and Victor Ferraez describe the concept as a blend of the two, focused on live-fire cooking and a menu that balances traditional steakhouse dishes with new flavors.

“We’re excited to open Rò Steakhouse and become a neighborhood spot where friends and families can feel at home,” Ferraez says in a statement. “We hope to create a welcoming space where people can enjoy great food any day of the week.”

Executive chef Marcelo Palacios, formerly of Prime 112, leads the kitchen. The menu features steakhouse classics alongside seafood and Latin-inspired dishes. Starters include ribeye chicharrón with guacamole and salsa cruda, Sierra flamed cheese with gouda and Oaxaca, and marrow-kissed scallops with sweet pepper cream. Cold plates range from hamachi tiradito with ponzu and chili oil to tuna tataki with roasted pineapple sauce.

Steak selections include filet, ribeye, tomahawk, and porterhouse, along with specialty cuts such as Café Crust New York, finished with a coffee-and-spice crust, and A5 Japanese wagyu served on a hot stone.

Desserts include a molten chocolate bomb with vanilla ice cream, a Yucatán-style flan with Gouda and puff pastry, and the Vasco cheesecake with berries and dulce de leche. The bar offers a focused cocktail list and wine selection, anchored by a cellar that doubles as a private locker program for up to 20 members.

From Mérida to the Gables

The 7,000-square-foot restaurant seats about 130 guests indoors, with an outdoor terrace planned to make its grand debut later this year. Designed by Arkham Projects and built by RAM Construction Management, the space features a rich blend of wood, bronze, and stone, with curved ceiling panels and moody lighting with organic yet striking features.
