As if Edge Steak and Bar didn’t offer enough already,
this gem of a restaurant has announced the beginning of a new interactive dining experience, “Specialty Dinner Night,” set to take place once a month. The Nose-to-Tail events will feature a trio of chefs who will collaborate to produce a five-course dinner with paired wines.
Organized by executive chef Aaron Brooks and chef James King, the series kicks off tonight, January 13.
The Edge duo will be joined by Joshua Smith of Esquire Magazine‘s “Best New Restaurant”, Tico in Boston.
This month’s kick-off theme is a pork tasting.
We were able to get our hands on tonight’s menu. Here are some of the highlights: whole head tortellini (with pine nut puree, charred Brussels sprouts and quince) paired with a Sonoma Country Seghesio Pinot Noir.
If that doesn’t do it for you (seek palate counseling),there’s porchetta served with family style sides of spinach with bacon and queso fresco, pork fried heirloom potatoes with olives and soft poached egg, and Joshua Smith’s hush puppies paired with a Seghesio Omaggio.
This dinner will include interactive discussions with the chefs of the farm-to-table relationship with pork purveyor, Palmetto Creek Farms. “We want diners to get to know the chefs with this unique experience,” Chef Brooks told us. “We all bring something different to the table.”
Priced at $99 per person (exclusive of tax and gratuity), dinners will be held on the last Tuesday of every month – the next is February 28 at 7 p.m. (theme yet be announced, but we heard whiskey was in the works for it), Reservations are required as seats will be limited; the experience will take place within the private dining rooms at Edge.
