The word’s been out for a few months that Top Chef alum and major heartthrob Fabio Viviani is bringing his Italian comfort food to Miami.

Siena Tavern is set to open on South Beach this year, with a menu that melds Italian favorites like lasagna and gnocci from Viviani’s family recipes with dishes inspired by Mediterranean cuisine.

Ali Rosen from Potluck Video, an online restaurant show, caught up with Viviani at the James Beard House, where he spoke about juggling his busy career, how Top Chef helped his career (even though he was thrown off the show twice), and how the Miami market differs from Chicago and Los Angeles, where the chef currently has successful restaurants.

In the video, Viviano explains that while Chicago diners are all business and Los Angelenos are into “seeing and being seen”, Miami is a party town and that the key to a successful restaurant is following the market. Viviani also says he’s more into making great food that people will love than getting a three-star review in the New York Times.
