Here’s an update on Swine Southern Table & Bar. Though there’s no “official” opening date yet, expect the pork-centrentic restaurant to open very soon.

Eddie Acevedo, chief operating officer for 50 Eggs, the parent company of Swine, told Short Order that the restaurant is “very close” to opening.

When pushed for a date, he confirmed that it was safe to say within the next two weeks.

Originally the plan was to open in time for SoBeWFF, but there were some last minute touches. Besides, all hands are on deck at the other two properties to contain with the rush of people who will likely converge on Yardbird Southern Table & Bar and Khong River House.

Both restaurants, by the way, were shortlisted for 2013 James Beard awards with Khong listed as semifinalist for “Best New Restaurant” and Yardbird’s Jeff McInnis up for “Best Chef: South.”

Swine’s Facebook Page is filled with culinary teases, like this Warm Sticky Icky Bun with pecan butter, candied smoked bacon, maple-bourbon toffee syrup, and “Sweet Potato Pie” ice cream.

And this pork porterhouse with melted red cabbage and andouille black beans. Plus, we’ve heard a barrel of bourbon was flown in direct from Buffalo Trace distillery in Kentucky. Sounds like a party waiting to happen.
