Brickell is turning into one big beer and sausagefest with the opening of Prost Wurstgrill and Bierhouse.

The restaurant was opened by a group of German investors, led by Michael Sponaugle, last week with a limited “soft opening” menu. Prost is now open daily for dinner and will open for lunch and dinner with an expanded menu on July 30.

Chef Phil Bryant, formerly with Swine Southern Table & Bar, is the consulting chef at the restaurant, and he’s created a menu that focuses on house-made sausages using various proteins.

The sausages are all $8 each and include a duck chorizo; a beef and barley made with Jackman Ranch wagyu; a Southeast Family Farms pork bratwurst with mustard & Prost sauerkraut, and a Tanglewood Farms free-range chicken sausage.

Prost is also offering one of the few authentic German pretzels in the United States, with dough flown in from a specialty bakery in Las Vegas, then freshly baked on the premises. Served with house-made mustard, they’re $12 each.

A curated selection of beers on tap include German beers and local brews.

Prost is open daily for dinner from 4 p.m. and will open for lunch and dinner, starting July 30.
