Francis Modina is French and has been in the U.S. for eight years. He started Le Vinois Bakery in about 2003. “We have a storefront, but we also sell at markets, up to eight a week in season, and next year more. The orange peel and chocolate rugalah’s my best seller. In season I sell 1,000 of them a week.”
Modina’s mission is to “bring some nice typical French products to this country, like our handmade breads, cookies, and flatbread pizza. In America, food is a way to eat, in France it is a way to live.”
