Andrew Balick has been named the new Chef de Cuisine at the DiLido Beach Club at the Ritz-Carlton South Beach, replacing Josh Becker, who was with the DiLido since November 2010 and with Ritz-Carlton for nine years. Becker is said to have left to pursue other avenues.
Balick starts his duties at the Ritz-Carlton’s flagship beachside eatery on September 1. Balick recently opened the 30-seat Pied a Terre restaurant at the Cadet Hotel in South Beach and left on June 30th. Before that, Balick was a sous chef at Azul for six years.
In other personnel changes, Bernd Schmitt was recently named Executive Chef of The Ritz-Carlton South Beach, making him responsible for Bistro One LR and DiLido Beach Club restaurants as well as Lapidus Lounge, in-room dining, banquets, and the luxury oceanfront hotel’s entire culinary operation.

family’s 160-room hotel in southern Germany and grew up in the
property’s kitchen.
Schmidt started working in the family kitchen at the age of six, then
attended culinary school at the age of 15. Chef Bernd’s career
highlights include senior sous chef at two Four Seasons properties and corporate executive chef at Canyon Ranch.
No word yet about changes to DiLido’s menus, though traditionally the
restaurant allows the chef de cuisine to showcase his individual talents with additions to the menu.
We do have confirmation that the watermelon sangria will
remain on the menu, and for that we’re thankful.
