90. Twice-baked upside-down Gruyère cheese soufflé
Anybody can toss calamari rings into a deep fryer or slice stuff
really thin to make carpaccio. Not anybody can create a steamy, savory
soufflé as light as Parisian mist, which is probably why so few chefs
even try. Luckily for us, Pascal Oudin keeps French tradition alive with
this twice-baked upside down Gruyère cheese soufflé in an aromatic
pool of Parmesan sauce ($11.95). It’s just one more reason to visit the
