German chef Rainer Becker created ZUMA based on the informal Japanese dining style called Izakaya as well as on his love of capitalizing letters.

The first ZUMA opened in Knightsbridge in 2002; then Hong Kong (2007), Istanbul (2008), Dubai (2008) -- and now Miami, chosen as the initial foray into America. We are honored. Seriously, this should be a really good one. Contributing to our high expectations is the knowledge that management and chefs for this and all ZUMAs are being trained in London.
