Chef Carla Pellegrino has just announced the February opening of Touche Rooftop Restaurant and Lounge, atop the E11even Miami, a mega-nightclub that’s being billed as both a nightclub and cabaret.

The restaurant and lounge, located atop the E11even nightclub at the former Goldrush strip club location, is scheduled to open in February 2014. No official word on the concept, but the restaurant is looking for a chef de cuisine, sous-chef, bar manager, sushi cook, and pizzaiolo, so it’s safe to say the menu will be eclectic.
The Brazilian-born chef is a graduate of the French Culinary Institute and is married to Frank Pellegrino Jr., the co-owner of Rao’s restaurant in New York City. Together, the couple opened Baldoria Restaurant on Eighth Avenue and Broadway before Carla launched Rao’s in Las Vegas. She is chef/owner of Bratalian Neapolitan Cantina in Henderson, Nevada, and was a cheftestant on Top Chef Seattle, where she was eliminated, in part, for undercooked squab:
