At Fiola Miami — the first project from the Michelin-starred, James Beard Award-winning chef Fabio Trabocchi — plenty of $200 platters piled with eye-poppingly fresh raw seafood circulate around a bustling dining room before finding their places on white tablecloths surrounded by men and women wearing tailored suits and blinding jewelry. What follows is a symphony of house-made pastas, expertly composed entrées, and à la carte proteins flown in from around the world. The service is on par with what one might expect of a Michelin-starred chef. That it's the third such restaurant to open in 2018 might be a sign of things to come.
