Willis Loughhead, former head chef at Tantra Restaurant in South Beach and Bizcaya at the Ritz-Carlton Coconut Grove, has accepted the position of executive chef at the Plaza Hotel in New York. Short Order spoke with Willis a little while ago to see what he had been up to since he left Miami in 2004. On Friday, he sent an email and expressed confidence that things should be “in full operational mode sometime in May of this year.”
