Sharon’s Spicy Tamarind Grilled Shrimp

24 large shrimp (peeled and deveined)
1/3 cup olive oil
1/2 cup finely chopped parsley or cilantro
5 medium cloves crushed garlic
1/2 teaspoon salt
1 tablespoon Sharon’s spicy tamarind sauce
wood skewers soaked in water for 30 minutes

Directions:

Combine all ingredients together with the shrimp, cover and allow marinating for 30 minutes.

Thread shrimp on the skewers and place on greased grill over medium heat. Allow shrimp to cook for approximately 2 minutes on each side, brushing regularly with marinade.

Serve with Sharon’s spicy tamarind sauce.
