Talk about musical chairs in the local food world: With the departure of Emeril’s Miami Beach chef de cuisine Brandon Benack to Norman’s Orlando, a void was left at the New Orleans-style restaurant. Well, that job has been filled by Brian Cantrell, who most recently helmed Ocean Drive’s A Fish Called Avalon. Locally, Cantrell was also at Nemo, Mark’s at the Park, and the Breakers Hotel. Short Order just reported Cantrell was replaced by Kal Abdalla at A Fish Called Avalon.
At A Fish Called Avalon, Cantrell specialized in American seafood. Emeril’s Miami Beach is known for New Orleans-flavored dishes such as barbecue shrimp with petite rosemary biscuit, Maine lobster gnocchi thermidor, and double-cut pork chop with caramelized sweet potatoes. In the coming months, we shall see how Cantrell affects the Collins Avenue eatery.
