When the Beverly Hills Café closed its Miami Lakes location in July 2022 after 43 years in business, locals mourned. The restaurant was famous for its loaded salads, large burgers, and warm, honey-yeast rolls served fresh out of the oven. Now, that legacy has a new home in Hialeah.

Hills Cafe officially opened its doors at 7380 W. 20th Ave. in November 2025. The project is led by Hillary Fayth, a former employee who spent 21 years working at the original institution. For Fayth, the revival is a tribute to a place that served as more than just a restaurant.

“Beverly Hills Café has been around since 1978,” Fayth told What Now last year. “My mom was a waitress there, and my dad was a customer at the bar; that was how they met. Then, fast forward 25 years, and I was working there. I started in 2001, and I was there for 23 years. It was like the Cheers of our community, where everybody knew your name.”

The sandwich selection covers the classics, from a triple-decker “Hills Club” to chicken parmigiana served on a kaiser bun.

A Menu Built on Nostalgia

The new 1,200-square-foot space is designed to feel like a sister concept to the original outpost, blending classic menu dishes with a few modern updates. The menu reads like a greatest-hits collection for anyone who frequented the Miami Lakes original (or one of the ten other locations they had around Florida during the height of their popularity).

The legendary loaded salads return with the signature dressings fans spent decades craving, including the “Hills Cobb,” which features grilled chicken, avocado, bacon bits, bleu cheese, black olives, and egg.

Other favorites include the half-pound “Hills Burger,” served on a toasted bun with crispy fries and optional toppings like sautéed mushrooms and onions. The sandwich selection covers the classics, from a triple-decker “Hills Club” to chicken parmigiana served on a kaiser bun. And of course, the fluffy, fresh-baked rolls remain the essential sidecar to every meal.

Fayth describes the new iteration as a mom-and-pop version of a large, high-volume cafe. “I’m sort of putting my own swag on it,” Fayth says. “We’ll have the base of Beverly Hills Café—it didn’t change a lot through the years—but we’ll be adding some things people said they wanted all along.”

She also plans to use the space for community-focused events and activities, such as financial literacy classes and study groups for local students.

Reviving a Community Hub

Beyond the food, Fayth envisions Hills Cafe as a gathering place for the neighborhood. The restaurant includes a kids’ corner and a bar area for those seeking a more casual experience or dining solo. She also plans to use the space for community-focused events and activities, such as financial literacy classes and study groups for local students.

The opening has already generated a lot of buzz on social media, where former guests have shared their excitement about the brand’s return, albeit in a slightly different form. However, fans looking for a weekend fix will have to wait – the restaurant is currently operating on a weekday-only schedule for lunch and dinner.
