Colombian partners Nicolas Hoyos and Juan Carlos Pardo proudly introduce Baru Urbano, “an experience that will seduce the senses through art, décor, music and cuisine.” The Brickell neighborhood restaurant/club touts an eco-conscious bill of fare with locally sourced ingredients. According to the press release, the menu “has been created with ‘Alma y Sazón’.”. I can’t swear by this, but I think that’s a spice mix made by Goya.
Chef Gabriel Petrovich is behind the line dishing global fare with
Latin accents. Items served will include leek dip in a bread bowl, beet
risotto, smoked salmon pasta, and a selection of seafood and meats
served with exotic sauces such as tamarind, guasacaca, amaretto and
Thai peanut. Cocktails by mixologist Arturo Sighinolfi will be made
with fresh, local fruit.
