49. Passion Fruit Panna Cotta at Bourbon Steak

This dessert’s refreshing bite and citrus tang is a hell of a way to cap off a red meat feast at business-chef Michael Mina’s aristo-raunt in Aventura. Bourbon Steak is often lauded for its royal atmosphere, fine cuts of protein, and top shelf liquors, but the joint’s commitment to the best ingredients money can buy is also evidenced in post-main options. Hats off to the pastry team for attention to detail. Note the surgical precision of the floss-thin green citrus elements’ placement atop the grapefruit. Panna Cotta is an Italian gelatin, milk, cream, and sugar dessert served cool, in this case with a lemongrass consommé and coconut-lime sorbet.
