43. Pan-Seared Sheepshead Fish Over Farro at Altamare
Altamare Restaurant, AKA the new and improved AltaMar, has been making a strong case for change being a good thing. Executive chef Simon Stojanovic emphasizes sustainable and organic menu items, as well as creative contemporary combos such as a delectable pan-seared sheepshead fish over warm farro flecked with chorizo and leeks, topped with grilled lemon and saffron aoli ($14). It hasn’t been around long, but we already count the sheepshead one of the finest fish dishes in town.
(Note: There are numerous spellings for sheepshead, such as sheeps head, sheep head, and sheephead. I choose sheepshead because the fish is named for Sheepshead Bay in Brooklyn, a neighborhood and spelling I’m quite familiar with.)
