Thanksgiving is over and you’re wondering how to turn all of that turkey and sweet-potato casserole into something other than turkey and sweet-potato casserole. Cindy Hutson, the chef and owner of the long-standing Ortanique on the Mile (278 Miracle Mile), must be a mind-reader because she’s hosting a Thanksgiving Leftovers cooking class this Saturday at 11:30 a.m.

Limited to 50 people, the intimate class will divide attendees into groups of eight. Each group will be guided by one of the chefs from Ortanique on the Mile and will get to elect their very own head and sous-chef to follow Hutson’s lead in preparing and plating her three signature dishes. On the menu: sweet-potato bisque with marshmallow crema and candied pecans; turkey à la king pappardelle with sweet peas, carrots, sweet potato, and button mushrooms; and snickerdoodle cookies with apple-pie ice cream. It’s like Thanksgiving all over again, if Thanksgiving included a champagne and wine pairing, which this does. Another thing included in the $108-per-person price: a surprise gift and a recipe booklet of what you learned for the day so you can make Thanksgiving happen whenever you feel like it.
