South Miami is finally getting an award-winning (and Miami-based) smash burger joint. Famed smash burger spot Skinny Louie will open in South Miami on Saturday, February 21, at 6 p.m. As the winner of New Times‘ Best Late Night Dining 2024, fans across SoMi are already pumped.
The opening marks the restaurant’s eighth location (Skinny Louie just opened in Dania Beach in January). It’s also its latest step in a rapid expansion across South Florida and even New York City.

From Wynwood to South Florida
Founders Gonzalo Rubino and Matias Palloni launched the burger chain in South Florida, opening their first Skinny Louie location in Wynwood before expanding throughout South Florida and into New York City. Built from the ground up, Skinny Louie blends a nostalgic 1950s diner aesthetic with a tightly focused menu designed for speed, consistency, and craveability. Through their hospitality group, MPGR Hospitality, the duo also operates Crazy Poké and Sushi Más, further cementing their presence in South Florida’s fast-growing dining scene.
“We are incredibly excited to open a new location in South Florida, which is truly our home,” say the founders. “We love the South Miami area, and it has been amazing to feel how excited the community is about our arrival. We constantly receive messages on social media asking when we are opening, so we are just as happy as our neighbors. Dania has been absolutely crazy, and we hope South Miami will be no exception.”
And Skinny Louie shows no signs of slowing down. Additional South Florida locations are already planned, including upcoming openings in Doral and Fort Lauderdale.

What’s on the Menu
The menu remains intentionally simple and consistent across every location. Guests choose from three core burgers: the “Skinny Louie Cheeseburger,” the “Applewood Burger,” and the “Classic Burger.” The lineup is rounded out with thin, crispy fries and milkshakes in “Cookies and Cream,” “Choco Brownie,” and “Strawberry Bliss,” a trio that leans fully into classic diner nostalgia.
Regulars also know to ask for the off-menu “Very Best Burger.” The burger earned the title of Best Burger at Burger Bash during SOBEWFF 2025 and continues to attract serious burger fans for its juicy cheeseburgers.
Each burger is made with 100 percent fresh Black Angus beef, cooked without oil or butter, and seasoned simply with kosher salt and pepper. Guests can order single, double, or triple patties. Ingredients can be removed, but extras from other burgers are not permitted. The restaurant also offers an Impossible patty for vegetarians.
What to Expect on Opening Day
On Saturday, February 21, Skinny Louie will give away 100 free “Cheeseburger Singles” to the first guests in line. This is now their tradition, which has turned past openings into full-on burger events.
Also, fans should plan to arrive early. Long lines have become the norm at openings, fueled by a loyal following and nonstop buzz across Instagram and TikTok.
