Let’s start with the 24:75. That’s a cocktail concocted from Beefeater 24, Sencha tea syrup (recipe follows), lemon juice and champagne. Beefeater 24 is a new gin infused with two types of rare tea. It’s only in limited markets right now, and Miami is one of them — The Florida Room introduced locals to it with a launch party on September 28. The suggested retail price is $28.99 for 750ML and $32.99 for 1L.

So that’s the 24:75. The 12:00 signifies midnight, the lift-off a combination of the drink, the festive evening, and the soaring of spirits in looking forward to a grand and brand new year. Hope you all have one.

2/3 Part Beefeater 24
2/3 Part Sencha Tea Syrup
1/3 Part Lemon Juice
Champagne, to top

Garnish with Fresh Cherry

Shake and strain first three ingredients into chilled flute glass. Top with Champagne and add the fresh cherry.

(Sencha is a grassy green tea — the most popular in Japan. To make the Sencha tea syrup, prepare strong Sencha tea, and mix equal parts of it with sugar in a saucepan. Bring to a boil, stirring, until the sugar has dissolved. Allow to cool.)
