Earth Hour 2011 is this Saturday, March 26 at 8:30 p.m. This global event started in Sydney, Australia in 2007, and has become the biggest display of climate activism worldwide. Hundreds of million people across 128 countries joined in the movement last year.
It is difficult to imagine a restaurant turning its lights off for an hour but Acqua at the Four Seasons Miami is going to take a chance for the second year in a row. Lights go off at 8:30 and only candles will light the dining room. “We are proud to join the effort to make a statement against climate change” says Simon Pettigrew, General manager.
Guests who enjoy the three-course Earth Hour menu ($42) will dig into sustainable and organic ingredients. Homestead tomato three-ways, tile fish in parchment and “roots in the city” citrus brown butter followed by a strawberry tangerine short cake complete a meal that will not only make your date’s eyes twinkle in candlelight but also help support WWF Global Conservation. A take-away gift that includes a soy-based candle in a recycled jar free of all artificial ingredients encourages guests to continue the movement at home.
