Josh Del Valle is fresh from the big city. The line cook made the move from NYC to Miami just four months ago to rub shoulders with Michelle Bernstein. He has a boyish charm and culinary finesse. But before attending The French Culinary Institute, the 27-year-old mixed beats in Long Island and served up peanuts as a flight attendant. Today he prepares the delicious cold tapas everyone worships at Sra. Martinez.
New Times: So, what brought you to Miami?
Josh DeI Valle: I came straight down to work with Michelle Bernstein.

What is your favorite cocktail?
The Sra. Martinez sangria. It is excellent.
What is your favorite dish served at Sra. Martinez?
The pan con tomate. It’s so simple. It’s just really good olive oil, tomatoes and sea salt. Michelle is all about flavor and with these elements, when it’s done right, it’s so good.
Do you get hit on while at work?
I’m heterosexual. But I have been hit on by guys here.
How do you handle your suitors?
I say thank you and tell them that I have a girlfriend.
Would you consider Sra. Martinez a sexy locale?
Definitely. A lot of her (Michelle Bernstein) attention came from Michy’s. But this is completely different. It’s all about small plates and sharing. And everything is quickly rendered. It’s sexy to share a plate. And a lot of it is finger food.
Where do you like to go out after work?
Buck 15 has a pretty good party.
What is something most people don’t know about you?
That I wear my heart on my sleeve. And that I studied journalism and grew up DJing in New York. I kind of inherited Hip Hop. I always expressed myself through music.
Does Bernstein come in often?
She comes in two or three times a week. But her visits are more for insight…for her flavor is so important.
